This is just a theory but Steam, Epic, Origin, etc don't just install the game but create folders with where the info is installed that they can control. I think the issue comes down to how GOG installs games and the double sided blade of lack of DRM and windows constantly updating security. And it doesn't happen enough for them to care about.
